Homemade flan 🍮 without oven

Ingredients:
For the caramel:
1 cup of sugar
1/4 cup water

For the flan:
1 can of condensed milk (397 grams)
1 can evaporated milk (354 ml)
4 eggs
1 teaspoon vanilla essence

Instructions:

Prepare the caramel:
In a small saucepan over medium heat, add the sugar and water.
Cook, without stirring, until the sugar dissolves and turns a deep golden color. This will take about 10-15 minutes.
Quickly pour the caramel into the bottom of a flan pan or pudding pan, tilting it to evenly coat the bottom.
Let cool and harden.

Prepare the flan mixture:
In a large bowl, beat the eggs until well blended.
Add the condensed milk, evaporated milk and vanilla essence.
Mix well until all the ingredients are incorporated and the mixture is homogeneous.

Cook the flan:
Pour the flan mixture into the caramelized mold.
Cover the mold with aluminum foil.

Cooking in a bain-marie:
Place the mold inside a large pot. Fill the pot with hot water until it reaches the middle of the mold.
Cover the pot and cook over medium-low heat for about 1 hour and 30 minutes, or until the flan is firm. You can check doneness by inserting a knife into the center; It should come out clean.

Cool and unmold:
Remove the mold from the water bath and let it cool to room temperature.
Once it is at room temperature, refrigerate the flan for at least 4 hours, preferably overnight.
To unmold, run a knife around the edges of the flan and turn the mold onto a large plate. The liquid caramel will cover the flan.
