Delicioso Locrio de Cerdo

Ingredients
2 pounds of rice
2 pounds pork
4 cups of water
1 teaspoon of ground oregano
1 large tablespoon of crushed garlic
1/2 teaspoon maggi chicken broth
1 Tablespoon of annatto paste
1 Tablespoon of olive oil
1 tablespoon of vinegar
1 Tablespoon onion powder or 1 whole piece of onion, cut into small pieces
1 teaspoon salt
1/2 teaspoon ground pepper
1 piece of red Cubanola chili

Extra salt and vinegar to wash the meat.

Elaboration

Step 1. Wash and disinfect the meats with the salt and vinegar that we have extra

Step 2. Season the meats with the mentioned seasonings (except annatto paste and olive oil)

Step 3. Preheat a cardero, then pour the oil and annatto paste. let dissolve

Step 4. Pour in the meat, cook over low heat without adding water until well browned. Then pour the 4 cups of water and cook for 20 minutes.

Step 5. Remove the meat from the lamb and leave the broth. Then wash the rice and pour into the cardero. Allow all the water to dry.

Step 6. Now pour the meat into the rice, stir to incorporate and cover it for 25 minutes and that’s it.
