CARNE DE RES EN SALSA

BEEF IN SAUCE

Ingredients:
500 g of beef can be steak, skirt, chuck, etc. cut into pieces
4 medium potatoes, peeled and cut into cubes
1 large onion, chopped
2 cloves garlic, minced
2 medium tomatoes, chopped
1 red pepper, cut into strips
2 carrots, peeled and sliced
2 cups of meat broth or water
2 tablespoons tomato paste
1 teaspoon cumin powder
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
Cooking oil.

Instructions:
– In a large pot or deep frying pan, heat a little oil over medium-high heat.
– Add the meat and brown it on all sides.
– Remove the meat and reserve.
– In the same pot, add a little more oil if necessary and add the onion and garlic.
– Cook until golden and fragrant.
– Add the tomatoes, red pepper and carrots to the pot.
– Cook for a few minutes until the vegetables are slightly tender.
– Add the tomato paste, cumin, oregano, paprika, salt and pepper.
– Mix well to combine the flavors.
– Return the browned meat to the pot and pour in the meat broth or water.
– Stir everything and bring to a boil.
+ Reduce heat to low, cover pot, and simmer for about 1 hour or until meat is tender, stirring occasionally.
– Once the meat is almost ready, add the potato cubes to the pot.
– Cook for another 20 – 30 minutes or until the potatoes are tender and the sauce has thickened.
